Someone over at board2 has made an editor to change the items that enemies drop. It's a great idea, but I wonder if it will work with a ROM that has already been edited by SOMedit.

It should. Since item drops are statically-sized (i think), chances are I won't be moving them around when I get around to implementing that part of the editor.
Nothing I have implemented now will touch these at all, but it will add a header to your ROM if one wasn't there before, so as long as their editor handles that it should be fine.

I added that feature too for my SD2 editor that I've stopped working on since somedit was released. I like the fact that SD2/SoM is finally getting the mainstream attention it deserves.
